Fruited Tea bread

As promised here is the recipe for the fruited tea bread I made for the Stour Valley Hostel weekend 🙂

7oz sultanas

7oz raisins

3/4pt of hot tea

12oz wholemeal plain flour

2 teasp mixed spice

2 teasp of baking powder

2oz light muscovado sugar

6oz chopped dates chopped

4oz ready to eat apricots chopped

1oz melted butter

2 eggs

Soak the sultanas and raisins in the hot tea over night

place all dry ingredients in a large bowl and mix well

add the soaked fruit with any extra liquid , and the remaining ingredients and mix well

divide between 2.. greased ( 1lb ) loaf tins level the surface then bake at 160/325/gas 3 for 50 to 60 mins.
