As requested by the walkers on the Swaledale Hostel weekend, sorry its taken so long !
250g dates chopped
300ml water
85g plain flour
1 tsp mixed spice
85g wholemeal flour
500g dried mixed fruit
50g ground almonds
80ml orange juice
Put dates and water into a saucepan and bring to the boil. Remove from heat.
Sieve plain flour, baking powder, and spice into a bowl. Add wholemeal flour, fruit and almonds. Mix then stir in date mixture and orange juice. put into a lined 900g loaf tin and bake at 170 for 45 – 50 mins. Mixture can be divided into 2 smaller tins and cooked aprox 35-40 mins.
